A few weeks ago I mentioned we were preparing more Smoked Hams from our latest harvest of Pastured Pigs.

Well, we completed the cure & smoke process and have them packaged and added to our website.

Everyone has their favorite cut of chicken. For some it is the wings (always sell out first), others it is the breast (also sells out fast). At the end of the line is the leg quarter.

However, many people (including Beth & me) prefer the leg quarters. If that includes you then you'll be glad to know about our new Leg Quarter Bundle.

Every so often a customer will ask about drugs and or chemicals used in our farm operations.

Recently we were notified by our USDA inspectors that during our upcoming harvest that they would collect several pounds of meat & tissue from six randomly selected chickens. The meat & tissue would be tested under the U.S. National Residue Program (NRP) for Meat, Poultry, and Egg Products.

Background: An essential aspect of food safety in meat, poultry, and egg products is the control of residues that may result from the use of animal drugs and pesticides, or from incidents involving environmental contaminants.

Tuesday, February 1st I received the results back from the lab. Of the 17 test performed there was no residue detected in any of the samples.

Trust and Transparency are key principles we operate our farm on. It's one thing to be able to say to customers that we do not use drugs & chemicals - being able to provide evidence from a third party does a lot to add credibility.

What If Pigs Could Talk

Well, at Nature's Gourmet Farm our pigs may not speak English, but their body language sure says a lot. Notice our pigs! See how content they are napping - they would say how nice the morning is and glad to enjoy the shade in our natural environment. The soft dirt is so relaxing. We have heard that some pigs live in cramped and confined spaces on hard concrete. Why would any farmer treat their pigs like that?
