Beef Update & A New Product

Beef Update – Typically this time of year folks are hesitant to buy bulk beef for their freezer due to hurricane risk.

That is why we have delayed our next custom half & whole beef processing until September. If you are interested, our next harvest will be September 2nd with pickup on September 22nd. If you want to be included then please email me your name, email, and cell number to be added to our wait list - and be the first folks contacted and guaranteed to receive an order.

Beef prices continue to increase and hit a new All-Time high this week fueled by strong demand and limited supply. For example, based on what a 700 pound steer sold for at the Hattiesburg Stockyard Monday, I could make more than feeding him till he weighs 1100 pounds and sell as packaged beef - but our mission is to provide nutrient-dense, clean food to our customers.

Effective immediately custom beef half and whole prices will increase $0.50 to $6.25 per pound based on the hanging weight.

Retail cuts will increase for September deliveries as well.

As you know, people's eating habits change in the summer with a focus more on grilling than slow-cooked roast. Yep, it's that time of the year when beef roast sales slow down. So, to stimulate sales we are bringing back our Farmers Choice Beef Roast Bundle - buy 15 pounds of roast and receive a 10% discount. Please note that it is called Farmers Choice as we select the roast based on available inventory. Our objective is to include a sampling of each roast in your bundle - as inventory allows.

You will also notice that some items have moved inside our store list - don't you hate it when grocery stores do this when you finally learned where your favorite items are located after the LAST time they rearranged 😀. Anyway, it should not be too confusing as those new items that were located at the top of the list are now listed with similar items.

A New Product - From time to time folks ask for Pork Bacon FRESH vs cured and smoked. So, we decided to cut 2 lb off bacon sides that were too big for our meat lugs and sell them fresh. You can find the item here. Please note the bacon is NOT sliced.

Eggs - Eggs are the one item we seem to go from excess to out of stock. Currently with the heat, our hens have really slowed down laying. We have changed how their water flows to keep it cooler, hooked up a sprinkler and timer to cycle four times during the middle of the day, and changed their feed. We have one more tactic that we will start this weekend to try and improve the lay rate.

Building New Chicken Tractors -
we started building four new chicken tractors this week and should finish up on Monday. Two will actually be used for turkeys out on pasture in about two weeks.

We collected all materials on our gooseneck trailer and pulled it under the very large oak trees in front of our house. This area stays shaded from morning to evening. We use top rail chain link fence pipe and bend the hoops using a bender from Colorado Metal Worx. Connection fittings like T's, Crosses, Corners, etc. all come from Colorado Metal Worx.

Chicken - Restocked July 23rd. Next Restock will be August 13th

Turkey - Hatchery is now taking orders. Have poults scheduled for July 10th (arrived) and August 20th. Additionally, Thanksgiving whole turkeys are on order for late October delivery.

Eggs - Restock each Tuesday prior to your delivery date.

Beef - Restocked July 20th. Next restock will be August 24th

Pork – Restocked fresh items July 9th. Cured items July 25th. Next restock will be August 13th

Lamb - Restocked March 27th. Next Restock will be September 2025.

What's Your Favorite Sausage?

Sausages – so, we are looking to our customers for Sausage Inspiration! Since we added pigs to our farm in 2015 (wow- 10 years ago) we have sold basically the same five sausage flavors. The Patty & Regular Link sell pretty good, the Cajun & Cracked Black Pepper sell fair and the Jalapeno not so much. When you look around there are many various flavors available.

A Really Cool Farm Story

Our Really Cool Farm Story – To really understand I need to take you back to April 2024 when we took delivery on 23 heavy bred Red Angus cows from a WY ranch. If you are new to our newsletter, we purchased them from a ranch that converted to Red Angus in 1960 when they bought their stock from the ranch that started the Red Angus breed. And, have kept a closed herd since inception except for two years. This means these cows should be as close to the original breed as there is.
